was born and bred in Spain and has
been importing Jamon Iberico to the U.K for five years. When he first
moved to London he spotted a nice for Jamon Iberico, and saw that it
was generating a growing demand amongst the serious gastronomes
for it's unique flavour and texture.
George is based in Trasierra (hills north of Seville) and goes back and forth to London on a monthly basis. Being based in Spain he can oversee quality control, select the finest hams and maintain a good strong relationship with his providers and customers.
These long-legged black hoofed Iberian pigs are descendants from the wild boar and
are reared in the cork-oak forests west central and south west of Spain. They are fattened on acorns (bellota).
